Barista Hyunyoung Bang is the 2020 Korean National Barista Champion.

This recipe brews about 50 grams in about 15 seconds, with a late flow rate of up to 4.5 g/sec. This is a very fast extraction compared to the typical extraction that reaches 2.5 g/sec. However, while fast brews are usually due to coarse grinds, Bang's is the opposite. The very fine grind brings out the most flavor components in the beans, and the excessive puck resistance is subtly addressed by reducing the amount of dosing. While a normal fast extraction would result in a downward ECĂ—Flow, Mr. Bang's extraction was an A-shape.
